These 4th of July Poke cupcakes are made with cake mix and jello! It's an easy patriotic dessert with fun pops of red and blue.

We've made quite a few treats in the past for 4th of July, like But here's a fun twist.
This time we made 4th of July poke cupcakes!
This is a fun variety of a poke cake in its mini version. Cupcakes are just so much easier to serve to a large crowd and clean up is usually a breeze.
These poke cupcakes are made with jello. We also used box cake mix to make the process go a little faster.

As fun looking as these cupcakes are, they are actually pretty easy to make!
Here we'll show you step by step how to make your own patriotic poke cupcakes.
Ingredients for 4th of July Poke Cupcakes
- Premade cupcakes (We used white cake from a box)
- 1 1.5oz box of blue jello (Only use half the package)
- 1 1.5oz box of red jello (Only use half the package)
- 1 cup of boiling water
- 1 tub of whipped topping
- Red and blue sprinkles
How to Make Your 4th of July Poke Cupcakes
Prepare your cupcakes according to the box instructions. You could also use your own favorite cupcake recipe.
White cake works best for the poke cake effect.
Allow your cupcakes to cool completely.
Once your cupcakes are cooled down, you can start working on the poke filling.
Do this by combining ½ cup of the boiling water with half the package of the blue jello mix in a bowl. Stir until the powder is dissolved completely.
Then combine ½ cup of the boiling water with half the package of the red jello mix in a different bowl.
Using the end of a wooden spoon, poke 3 holes into each of the cupcakes like shown below. This step is what makes these "poke" cakes.
Once all of your cupcakes are poked with 3 holes, carefully start spooning the jello mix to fill the holes.
Make sure to only spoon one color per hole. You want to keep the blue and red separated or you'll end up with purple cupcakes.
In each cupcake, we poured one color into 2 of the empty holes, and then one color into the other empty hole.
Once all of your cupcakes are filled with the Jello filling, put the cupcakes into the fridge for ½ an hour to allow Jello to soak in a firm up.
Once your cupcakes have been chilled for a while, you can take them out of the fridge and ice them with the whipped cream topping.
Now add your red white and blue sprinkles and your cupcakes are gorgeous and ready!
And of course, these babies really sparkle when opened up.
